Memorial Day Weekend

Hello!

Rygh has been busy baling hay this week and I have been busy learning how to be a PACU nurse!  Here's some pics from our week!

Perk of my new job.... don't have to work holidays= one happy nurse!

oh baby

Today was Mikkie's baby shower in Weatherford.  Here's a few pictures!

cake balls!

ello!

Hope everyone is doing well!  I completed my first week of work so far!  It was good!  Its a lot different than what I have been doing but I think I might like it!

Mandie and I made cake balls today for Mikkie's baby shower tomorrow!  Let me just say, cake balls are pretty difficult to make!  After making quite a few, we learned a few tips that I will now pass on!

First, we made a Styrofoam stand.  I bought two pieces that were the same size. I cut one down and stacked it on the other. I used toothpicks to hold the two pieces together.  I painted a design onto the Styrofoam.  I used scrapbook paper on the top of the base.   I read that you were supposed to use "Styrofoam glue" on Styrofoam but I used tacky glue and it worked just fine!


Next, I made a little "Congrats" flag sign to go on top.  I used scrapbook paper that  I cut into flags. I used thread and sewed them together.  I am going to tie the flag sign between two toothpicks. ...... and  I might have been looking at wedding pictures while doing this! 



I gathered a few supplies to decorate the cake balls...more on this later.


Bake the cake as the box indicates.  Let the cake cool completely.


Next, break up the cake into a large bowl.  Add about half of a tub of cream cheese frosting to the cake crumbs.  Mix the icing and cake together with your hands.  It gets a bit messy!  Next, roll the cake into about one inch balls.  Place on parchment paper in a pan.


Place balls in a pan and place in freezer.  This is a key tip!  The cake ball stick will stick better in a frozen cake ball.

Warm the CandiQuik chocolate in the microwave.  It takes just a few minutes.  Now, dip the cake ball stick about an inch into the chocolate then dip the chocolate end of the stick into the frozen cake ball.  Place a stick into each cake ball.  TIP:  let them dry before covering the rest of the cake ball in chocolate.  It will help the stick stay in the cake ball better. 


Now, dip the cake ball into the chocolate and place onto Styrofoam to harden.  Before, it is completely dry, add decoration to each cake pop.


We had a few mistakes....this is the graveyard.  Rygh enjoyed it!



Place the cake pops into the Styrofoam.

Well, I have been working this week and Buster has found a new friend.  His new friend and him share lunch together and then snuggle in the chair. 




Rygh and I just made a DQ run with the dogs. Now, we are enjoying an NCIS marathon....oh the exciting life of being married!

"this is better than key lime pie any day and double on sunday"

Hello!  Happy Mother's Day!

Just a little recap of the weekend!

Rygh and I started the weekend with a goof meal at Chili's and some DQ ice cream.  On Saturday, Rygh's best friend, Jonathan, and his parents arrived!  They are staying with us for a few days.  They are from Alabama and we have heard lots of "OH MY's", "Praise the LORD for jalapeno buns" and lots of other funny sayings.

I made Chicken Enchiladas, refried beans, and Mexican corn for dinner!  We started off the meal with fresh guacamole that went pretty quick!  The chicken enchiladas recipe came off of Pinterest.  I left out the avocados because I wanted to freeze some and wasn't sure how avocados would freeze once sliced.   We had our first meal out on our screened in porch!  It was a bit chilly but very nice!

Guac......if you put the nut in the guacamole after you make it, it helps it stay green longer!

I got to use my new cool plate... it has interchangeable decor!  Tonight I used a sombrero but I also have a cupcake, hamburger, Easter egg, and many other cute pieces to make a meal special! 


We ended dinner with Baked Smores!  This recipe got rave reviews and was perfect with a glass of milk!

Today, we had egg casserole and cinnamon and sugar donuts for breakfast.  Rygh's parents were in town for a sheep dog trial so they joined us for a big breakfast!  After breakfast, Rygh's parents left and we headed to Harvey for church.  Jonathan's mom had a hankering for jalapeno buns from Hard 8 so thats were we had our Mother's Day lunch!  This afternoon we spent looking at cows, shooting shotguns, playing football, and just talking.  

Dinner tonight was sloppy joes and chips!

I just wanted to say a special Happy Mother's Day to all the Moms but especially to my mom and my mother in law!  Yall are the best and we love you very much!

cookies and cards

Hello!

Today, I baked Cowboy Cookies!  Rygh and all of his friends love these cookies!  They contain chocolate chips, coconut, pecans, and oats!  I'm not a huge fan of coconut but I love it in these cookies!  Check out the recipe here!

Just beware that this recipe makes a lot of cookies!  It also makes too much to mix all of it in a Kitchen Aid Mixer so get out your muscles!




Another thing I did today....I made an album containing all of the cards we got from our wedding, showers, and the in between!  We had lots of cards!  We are blessed to know so many great people that want to support us! 


First off, I hole punched all of the cards.  Many of the cards are different sizes... I decided to make my cover to have three hole punches.  On the larger cards, I double hole punched them.  On the smaller cards, I just put one hole in each card.  


I used ribbon to hold the cards together.  I threaded each card to fit appropriately.  The bigger cards I threaded through the top two holes.  The smaller cards I threaded through the middle.  The little note cards that come on gift bags, I threaded them through any of the holes, depending on where I needed more volume.  



After, all the cards were threaded, I added a back cover page using scrapbook paper.  I tied the ribbon in a knot.  It's important to tie the knot pretty tight that way the cards won't shift too much.  


Lastly, I gathered up some of the materials we used for the wedding... our save the date, sticker, stamps, well wishes card, and cookie sack.   I used all of the above and made a cover! Here is the finished product!




I like having all the cards, notes, and well wishes in one place!  It's kind of a fun reminder of our engagement period, showers, and wedding! 

Well, Shepperd's Pie is in the oven for dinner and we are having friends over!  Hope everyone has a great night!  We are hoping for a good storm tonight!

a porch!

Hello!

Today it rained a bit in Stephenville!  Praise the Lord!

My parents and their best friends came to visit us today!  I made a blue cheese, apple, candied pecan salad with roasted chicken that was great!  My parents brought us a patio table!  My parents' friends brought us a beautiful reclaimed wood mirror!  Thanks Mary and Abel!



Yesterday, I painted the screened in porch and Rygh finished screening in the porch!  It looks great!  So excited to be able to eat a few meals outside on the porch!  I'm so thankful my husband is so handy!

BBQ and shells.... shot gun shells

Hello!

So yesterday, Rygh and I went to Cabela's and bought a few things.  For dinner, we headed to Tim Love's Woodshed Smokehouse.  It was a cool place but in the summer I bet it will be hot!  It is an open air restaurant on the Trinity River by TCU.  Rygh and I started with the whitefish dip which was excellent!  I had the 3 kale salad which I loved!  We shared the woodshed burger which had a hamburger patty, chopped beef, and sliced sausage on it... the best of every world!  Rygh also had ribs!  He said they were great!  I didn't try them because I don't like to eat things off the bone... a little too carni for me!  We finished dinner with the peach cobbler!  so yummy!  We also had perfect seats to watch the Kentucky Derby!





We had a great trip to the "city."  

p.s.  someone teach me how to turn pictures... i can't figure it out!



today, we headed to harvey for church!  church was great and we also went to Sunday school!  we are working on getting connected!  after church, we went to pastafina!  it was great as usual!

this afternoon we shot shotguns and watched the rangers lose :(
