Yolo

Hey!

So yesterday as I was talking with tanner and Rygh I figured out what yolo means. Just in case you were wondering.... You only live once!

Rygh and I went to church this morning and now we are watching the wedding date and listening to the rain!

We made some gluten free cowboy cookies. Rygh helped.. However he added cumin and not cinnamon....

Updates

So it's August! I cannot believe how fast time has been going now! Rygh bailed 280 bails of hay this week. I survived my first night of being on call by myself! Buster has been busy playing squirrel and diesel has been scoping out when the neighbors feed their dogs so they can share:) He is getting a bit chunky!!

The past month and a half I have been attempting to be on a gluten free diet! It's been a little difficult but I'm learning! Here is a GF recipe!

Last weekend we were in West Texas with Mandie and Bobby. Mandie made these Special K bars that were amazing! I tweaked her recipe to make it GF friendly!


Ingredients...

I cup sugar
I cup peanut butter
1cup lite corn syrup
5 cups rice chex
1-2 bags of chocolate chips

1. Melt sugar and corn syrup in saucepan until sugar is dissolved.
2. Remove from heat. Stir in peanut butter.
3. Once it is mixed well, add the rice chex. Mix well.
4. Pour rice chex mix into 9x13 greased pan. Smooth evenly.
5. Pour chocolate chips on top. I used one bag of ghiradelli semi sweet and one bag of ghiradelli milk chocolate because Rygh wanted them! Ghiradelli is the best... No more nestle for me!
6. Place pan in warm oven to melt chocolate. Remove pan from oven once chocolate is melting. spread evenly.
7. Let pan cool and then place in fridge to let chocolate harden. Cut into squares and enjoy!!



Also, today I got to see some of my old coworkers from Baylor! It was so fun catching up and hearing everyone's life updates! Miss y'all!!
